If using dried cowpeas, soak overnight, drain, then simmer in fresh water 45 min until tender.

Heat palm oil in a pot on medium. Add sliced onions and fry until soft and beginning to colour, 10 min.

Add garlic, scotch bonnet, and dawadawa. Stir and fry 3 min.

Add tomatoes and crayfish (if using). Cook 10 min until the tomatoes collapse.

Add the cooked (or canned) cowpeas with a splash of their cooking liquid.

Simmer 15 min, stirring occasionally, until the stew thickens and the beans have absorbed the flavours.

Season generously with salt. Serve with rice or boiled yam.
