Mix flour, yeast, sugar, cardamom, cinnamon, and salt in a large bowl.

Make a well; pour in coconut milk and warm water. Mix until a soft dough forms.

Knead on a lightly floured surface for 8–10 min until smooth and elastic.

Place in a lightly oiled bowl, cover with a damp cloth, and rest 45 min until doubled.

Divide dough into 4 portions. Roll each into a circle about 5 mm thick, then cut into quarters.

Heat oil to 170°C (340°F). Fry mandazi in batches 3–4 min per side until puffed and golden.
