Press tofu between paper towels for 10 min. Cut into 2 cm cubes.

Heat oil in a heavy pot. Fry tofu until golden on all sides; remove and set aside.

In the same pot, sauté onions until soft, about 7 min. Add garlic, cook 2 min.

Stir in tomato paste and dawadawa; cook 3 min until fragrant.

Whisk peanut butter into the vegetable stock until smooth. Pour into the pot.

Add the whole scotch bonnet and mushrooms. Simmer on low heat 20 min, stirring often to prevent sticking.

Return tofu. Simmer 10 more minutes. Season with salt. Remove the scotch bonnet before serving.
